Cheesecake Blondie Recipe
Chocolate Chip Layers
1 cup shortening
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semisweet chocolate chips
Filling
2 (8 ounce) packages cream cheese
1/4 cup granulated sugar
2 eggs
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan
In a large bowl, cream together shortening, brown sugar, and 1/2 cup white sugar. Beat in the 3 eggs one at a time, then stir in the vanilla
Combine the flour, baking soda, and salt; blend into the sugar mixture
Stir in chocolate chips, and set aside
In a separate bowl, mix together the cream cheese and 1/4 cup white sugar. Mix in the 2 remaining eggs.
Spread 1/2 of chocolate chip dough in bottom of the prepared pan. Bake in Preheated oven 15 min
Pour cream cheese batter on top of dough. Bake 10 min
Drop pieces of the remaining chocolate chip batter over filling. Don’t worry if there are gaps; the batter will spread
Bake for 35 more minutes, or until lightly browned on the top. Let the brownies cool in the pan before cutting into bars

Chewy Bars
adapted from Cooks.com
1 box (2 cups) light brown sugar
1 stick (1/2 cup) melted butter
3 eggs, beaten
2 teaspoons vanilla
2 cups flour
1 cup chopped pecans
1 cup chocolate chips
And in case you didn't know before (I didn't) 1 box of brown sugar is 2 cups. I checked it out and measured, just for you!
Combine Brown sugar, melted butter, eggs and vanilla. Make sure it's blended well. Add flour, 1 cup at a time making sure batter is smooth.
Pour batter into a greased or parchment lined 9 x 13 pan. Smooth out to the corners. Your batter will be thicker than cake batter but thinner than most brownie batter.
Sprinkle on your nuts,
Then your chocolate chips.
Most of the recipes I saw said to press chips and nuts down into the batter. I just tapped my pan on the counter a few times to make them sink in a bit.
Bake in a 325 degree oven for about 30 minutes. Let cool completely before cutting and eating.
And just like a brownie, the edges and corners are the best!

Mac N' Cheese with UNCOOKED Pasta!
This brilliant recipe uses UNCOOKED pasta and can be found, along with lots of other great recipes, at thecountrycook dot com
Ingredients:
2 cups macaroni, uncooked
4 cups milk (2% or higher)
4 tbsp. salted butter, melted
1 tsp. table salt
8 oz. Velveeta cheese, cubed or shredded
4 cups shredded cheese (2 cups cheddar, 2 cups mixed cheeses)
Directions:
Preheat oven to 350F degrees.
Spray a 9x13 baking dish with nonstick cooking spray.
Cut up your Velveeta cheese into small 1/2-inch cubes (or you can shred it)
In a medium bowl, combine milk with melted butter. Add in Salt.
Pour in UNCOOKED macaroni.
Now add in cubed or shredded Velveeta, then 2 cups of shredded cheeses.
Pour the mixture into your baking dish. Cover with aluminum foil. Bake for about 50-60 minutes (until macaroni is cooked and most of the liquid has been absorbed).
Oven times vary so check it around the 40 minute mark. Take it out of the oven, remove foil, and top with 2 cups of shredded cheddar cheese.
Put it back in the oven (uncovered) for another 10-15 minutes (until cheese is melted, bubbly and golden). Serve warm.
